Nasi Kerabu
Nasi kerabu is quite popular in Kelantan. It is generally mean ‘salad rice’. The kind of this food is spicy. Kelantan has a variety of nasi kerabu. There are Nasi kerabu biasa (normal) or nasi kerabu putih (white) which will be prepared with its own sambal tumis (a special coconut milk based gravy with local herbs and spices, with a hint of chilly) or Nasi Kerabu Hitam (black) and Nasi Kerabu Kuning (yellow) which use tumeric in the preparation of the rice. Nasi Kerabu Hitam and Kuning does not require a sambal tumis, instead, it has watery chilly sauce that makes it slightly hotter. Their ‘kerabu’ (salad) could be any fresh vegetable that tosses together a mélange of aromatic ingredients such as ginger flower, dried shrimp, and bird’s eye chili, cucumber and fruit julienne. An integral ingredient is kerisik. A part from that it is also served with fried breaded fish, keropok keping, salted egg, ‘solok lada’ (fish fillet and coconut-stuffed chilly), and pickled garlic (local gherkins). This food is served at anytime but it’s more suitable for lunch meal.
